1 kg eggplant
1 red pepper
3 cloves of garlic
50 g flour
1 green connection (dill or parsley)
Method of preparation
Wash the eggplant well, then cut into thick slices about 1.5 cm. Sprinkle salt over these slices and let them drain on some kitchen towels, because they will leave a lot of water.
After half an hour, squeeze the eggplant with all the water left and roll them in the flour, then fry them in hot oil.
Separately, heat the finely chopped onion and the chopped bell pepper, then add the peeled tomatoes, chopped. In the pan in which you have cooked the vegetables, add the slices of bread and cover the food with a cup of water. Allow to boil for about 15 minutes, then add the chopped garlic and taste with salt and pepper.
Finally, sprinkle fresh green over the food.
For a special aroma, add a chopped pepper and a few sesame seeds.
