The cauliflower pudding is served plain or as a side dish near a chicken breast on the grill.
2 l of water
1 white onion
1.3 kg cauliflower
50 g butter
2 cloves of garlic
1 cup milk
1 tablespoon flour
4 tablespoons parmesan
4 tablespoons grated feta cheese
Method of preparation
Bring water to a boil. Break cauliflower into bouquets, and when the water boils, put cauliflower and boil it for five minutes. Drain the water and allow the cauliflower to cool.
Put the melted butter and heat the onion, cut very thin. Add the garlic, finely chopped, heat everything another two to three minutes, then put the flour and mix well. Add the milk and mix again.
Give the sauce aside, add the feta cheese and parmesan cheese, but be careful to keep a tablespoon of parmesan for the final. Matches the flavor sauce with pepper and nutmeg.
Put the cauliflower bouquets in a greased bowl with a little butter. Place on top of the sauce and sprinkle the preserved parmesan spoon.
Bake cauliflower over low heat, in the hot oven, for 40 minutes, until golden brown crust.
