Seafood risotto is a tasty dish, suitable for a family dinner.
200 g rice especially for risotto
200 g seafood cocktail
50 g butter
2 cloves of garlic
700 ml vegetable soup
50 ml white wine
Method of preparation
Put the melted butter, then add the finely chopped onion, chopped garlic cloves and leave to warm.
Add the rice and continue mixing until you get a glassy mixture. Add the seafood and wine and leave everything on a low heat until the alcohol evaporates. Put the soup over the risotto and let it boil until the rice is al dente, but creamy.
Add the grated parmesan rice, season with salt and pepper and mix well.
Serve the rice with the green sprinkled on top.
