The apple juice is an aromatic preparation, which is kept over winter, in an airy and cool room.

Method of preparation
Wash apples in cold water, then cut into thick slices. Put everything in a boil in 2 l of water, after you first covered the slices of apple with sugar.
After the apples have softened, remove the pot from the heat and leave the contents to cool. You must pass the apples through a sieve, then put them back in the water in which they boiled.
Add 1-2 teaspoons of cinnamon. The obtained must be allowed to boil for 10 minutes, then poured hot into sterilized bottles.
Tie the bottles with cellophane and pasteurize them.
Keeps the must at the room until serving time.
