Spinach cream soup

Spinach soup is very rich in protein and can be consumed in summer, when you need a light and healthy diet.


Preparation time

50 minutes




1/4 pack of butter

1 white onion

2-3 cloves of garlic

2 small potatoes

500 ml vegetable soup

500 ml milk

4 tsp cream

1/2 lemon

Method of preparation

Put the butter in a pan and heat the onion and garlic for 5-6 minutes, until it turns golden. Add the chopped potatoes and stir until softened. Pour in the milk and let it boil, then add half the amount of spinach and lemon juice.

Cover the pan with a lid and wait 10-15 minutes for the spinach to soften. Turn off the heat and leave everything to cool.

Pour the soup into the blender, add the remaining spinach and mix until everything becomes homogeneous. Pour soup into a pot and add salt, pepper. Thin the mixture with vegetable soup, if it seems too thick. If not, you can leave it like that.

Serve soup in bowls then add cream.
