600 g fresh or frozen broccoli

150 g Cheese Delaco Sofia shaved large

6 slices of rye bread

1 tablespoon of olive oil

1 tablespoon chopped parsley leaves

1 tip of salt knife

ground black pepper

Broccoli cream cheese soup Sofia is absolutely delicious and is very easy to prepare.

For starters, break the broccoli cap into small bouquets and boil them in a liter and a half of water with a little salt, until it softens. If you use frozen broccoli, the boiling time is shorter, it will soften faster. Do not throw the juice in which you boiled it, because you will need it to thin the cream.

The next step is to lower the broccoli with the mixer, until it becomes a consistent cream and then add the juice. You can keep a few whole bouquets of broccoli to decorate the soup when you serve it.

To prepare the croutons you need a pan in which you put a little olive oil in the heat. Slices of bread in small cubes and put them to brown.

The soup is divided into four bowls, add the grilled croutons and sprinkle the grated Sofia cheese as the soup is still steamy.

Garnish beautifully with chopped parsley and black pepper and then serve to your loved ones.
